Coconut Matcha Latte

I am a big proponent of matcha green tea so I wanted to share a fun new Matcha Coconut Latte recipe with you today! Matcha is a special type of powdered green tea that is grown and produced in Japan (usually). The green tea leaves are shaded from the sun for the last few weeks of their growth, increasing the chlorophyll content and creating a gorgeous green color. Then, the leaves are carefully ground with stone grinding wheels to produce a fine powder.

Unlike other tea, you are consuming the entire leaf, making Matcha more potent than other tea varieties. In fact, only 1/2 tsp is needed to brew a traditional cup of Matcha.

It's loaded with antioxidants, has been shown to boost memory and concentration, increases energy levels, and is rich in fiber and chlorophyll.

This is the type of Matcha I use.

COCONUT MATCHA LATTE

Serves: 1 latte

Ingredients:

  • 1/2 -1 tsp matcha

  • 1/2 cup hot water

  • 1/2 cup warmed coconut milk (I use full fat milk from a can but you can use any kind you like)

  • 1 tbs coconut cream (this is the thick, rich coconut solid that is at the top of the can after you've put it in the fridge for a few hours )

  • optional - sweetener of your choice, to taste (Stevia drops for no glycemic effect, or raw honey)

  • Instructions:

Spoon the matcha into a large mug. Add the hot water and mix. Add hot coconut milk, and coconut cream (this part is optional but oh, so yummy) and whisk briskly until frothy - about 30 seconds or so. You can also use a frother or throw it into your Vitamix/blender.

Taste and add additional water, coconut milk, and/or sweetener to your liking.

Note: you can also use a lighter coconut milk and omit the cream for this, but I love the rich taste of using the cream and it's a very healthy fat, so don't be afraid to go this route!
