How to Make Your Own Almond Milk
I'm a bit embarrassed to admit this, but I only just made almond milk at home for the first time! I'm not sure what exactly held me back in the past. I've been using alternative milks for a solid 12 years now and had some sort of mental block against making it on my own, I guess. But the truth is, now that I've done it I'll never (I know, never say never!) go back because it's so easy it's almost ridiculous. And, it's so much cheaper and healthier than store bought -- there's no added sugar, stabilizers or other additives (such as carrageenan).
Make a basic plain milk or experiment with adding flavors such as vanilla or cinnamon, maybe some cacao. So yummy.
Ingredients:
- 1 cup raw almonds (you can also use other nuts such as cashew, pistachio, pecan)
- 3 cups filtered water
Directions: Soak one cup of nuts in about 3 cups of water for 12 hours. Drain the nuts and give them one final rinse. Add nuts and 3-4 cups of filtered water (and any other flavors/enhancers you'd like to add) to a blender and blend until you've got a smooth consistency. Strain the liquid through a cheesecloth or a fine mesh strainer.
