High-Energy Drop Cookies (gluten & dairy free)

My boys love granola bars and I love to pack them for snacks, but there's a couple of problems with them: 1. the high quality kind that are organic, have less sugar, and enough protein and fiber are EXPENSIVE, and 2. I always feel terrible about all the wraps and waste.  So, finding something that they both like and that I can make very quickly and easily is something I set out to do fairly frequently. Today, I made these gluten and dairy free high energy 'bars' for the boys (I like to call them cookies) that are so cinch-y and fast, you could easily make a batch a week and it wouldn't be a hassle.

Here's how:

 

HE cookie

Ingredients:

2 c oats

11/4 c almond butter

1/2 c honey (raw is preferable)

1/4 c coconut flakes

1 tsp vanilla extract

dark chocolate chips (to your liking)

Add all ingredients to your bowl and mix. It's that simple. You can adjust some of the ingredients for your own preferences...some people like this with more almond butter, some with a little more honey. And, you can have fun adding other healthy ingredients like flax meal, goji berries, etc.

Once I've mixed everything I roll them into balls and refrigerate.

These babies will give you a lasting energy boost as they are filled with protein, fiber, and healthy fat!
