Radiant Skin Salad

Red Cabbage Salad with Apples and Walnuts
This salad is chock-full of antioxidants and will make your skin glow!

Serves 1

1 cup red cabbage, shredded

1 cup Napa cabbage, shredded

1/2 firm apple, like gala or granny smith, peeled and sliced

2 tablespoon lightly toasted walnuts

1 ribs celery, sliced into bite sized pieces

1 tablespoon dried cherries or diced dried apricots

Honey, Orange and Dijon Vinaigrette (if I don't have this dressing I'll use balsamic vinegar and olive oil)

Place the cabbage, apples, nuts, celery and dried fruit in a salad bowl and gently toss in the dressing.

 

Honey, Orange and Dijon Vinaigrette

Makes 4 servings

1/3 cup extra virgin olive oil

3 tablespoons apple cider vinegar

2 medium shallots, finely minced

1 teaspoon Dijon mustard

1 tablespoon soy sauce

2 tablespoons orange juice

1 teaspoon honey

1 teaspoon salt fresh ground pepper to taste

Whisk together the mustard, orange juice, soy sauce, vinegar, salt, pepper and shallot and slowly whisk in the olive oil and honey.
