Cashew Cream Berry Parfait
OK everybody, this one is delicious! IF you haven't even experimented with cashew cream, drop everything and make a batch now! It's crazy easy and you can use it for all kinds of things. It's a fabulous stand-in for dairy, sauces for pasta, and rich desserts. You can make it sweet or it can be a very neutral base.
AND, cashews are a great mineral source containing 31% of the daily recommended value for copper, along with 23% for manganese, 20% for magnesium and 17% for phosphorus,add to that 12% of the daily recommended value for vitamin K.
Cashew Cream Berry Parfait -1/2 c soaked cashews (soak raw nuts at least 30 minutes but preferably more) -1/2 c almond or coconut milk -1/3 cup rolled gluten-free oats (no need to cook these!) -1 cup frozen or fresh berries -1 tablespoon hemp seeds -1/2 tsp vanilla -1/2 tsp maple syrup (this is optional)
Blend cashews, milk, vanilla and syrup in high speed blender for the cream. To make it more thick add less milk. Layer cream, berries, uncooked oats, hemp and voila!
